Healthy, Gluten Free, Protein Filled, Two Tiered Cake!
Hey pals, its been a hot minute. So last weekend I had the pleasure, and honor, of making my MMA gym’s three year anniversary cake. I was tasked this since I have been known to make awesome protein filled treats for the gym members, and because if anyone follows me on social media, knows this is my passion (outside of athletics).
I wanted to make it healthy obviously, but needed to make it really stand out both taste and appearance wise. I decided to make the top layer a Vegan cake with an avocado and matcha green tea base, a raw cashew coconut filling, and a whipped coconut cream frosting. The tastes were not overpowering and they really complemented each other.
The bottom tier I kept with the gluten free trend, and made it cookies and cream flavor. The cake layers were chocolate with a secret ingredient….Black beans. The filling was made by whipping heavy cream and folding in gluten free “oreos”. The frosting on the outside was just homemade whipped cream with natural vanilla pudding mix as a stabilizer.
I got funky with the decor. I used these Ninjabread Cookie Cutters to make fun cookie guys that looked like they were sparring. The cookie dough I used was a very easy coconut and peanut flour recipe that I created. I tried to make the Gym’s logo robot out of sugar paper. It worked but some parts cracked, and once it hit the humidity in the gym it melted a bit as you can see. But you still get the idea of the logo.
