Grain and Dairy free Protein Carrot Cake
For those of you that want a healthy treat I made this. I use Maximum Nutrition Center Cinnamon Protein, but any cinnamon protein works.
mixed together with a spoon and baked for about 30 minutes at 325°f:
1/4 cup of rolled oats
1/2 cup of coconut milk
1 tbsp of chia seeds
1 T flax seeds
1 egg white
3 scoops MNC cinnamon swirl whey
1 tbsp of coconut flour
1 medium grated carrot
1/4 cup of crushed pineapple
1 tsp of vanilla essence
1 tsp of cinnamon
1 tsp of allspice
1/4 reduced fat coconut
1/4 c Walnuts and raisins if desired
The frosting was made with:
2 cups raw cashews ground to a fine powder
3T stevia
Vanilla to taste
1/4C whipped coconut cream
Whip the coconut cream for a few minutes until somewhat resembling whipped cream and then add the rest.
